Centennial experience

The Scolaris winery, in continuous improvement, is the expression of a almost centennial experience, where technological progress becomes the tool to make wine according to tradition.

Stabilization plants, barriques, controlled-temperature fermentation and refining of particular wines, the Vacum Siprem advanced model vacuum press to obtain wines that fully express their qualitative potential, are some of the innovations introduced by Marco Scolaris for guarantee the excellence of the wines produced in the cellar.

The Past

The first winery built in 1924 by Giovanni Scolaris used rather simple equipment: vats in acacia wood, screw press, manual piston pump, barrels in Hl 7 chestnut, barrels in Slavonian oak from Hl 3.

With the development of the company and the need to bottle the wine, which until then had been sold in bulk, in the fifties the winery was equipped with a new processing area adjacent to the old structure. In addition, the purchase of the first bottling line of the Seitz company, the “Ferrari” of the time, with the production capacity of 3000 bottles per hour. At the same time, the wine-making rooms were expanded, equipping them with the most modern grape presses: the Willmes and then the vacuum Siprem.
